1 medium onion - sliced thin
1 1/2 pound fillets perch
1 cup sour cream
1/8 teaspoon salt
1/4 teaspoon paprika
1 teaspoon mustard
steps:
1. set oven for 400 degrees. cover bottom of baking dish with lemon and onion slices. sprinkle lightly with salt and pepper to taste. lay fillets on top. cover. back 20 minutes.
2. remove cover. combine remaining ingredients and spread over the top of fillets. broil 3 inches below heat until brown.

ocean perch fillets with diablo sauce

fish ingredients:
1 16-ounce package frozen perch fillets
1 teaspoon seasoned pepper
2 tablespoons butter
1 slice dry white bread - crumbled
sauce ingredients:
1/3 cup chili sauce
1 1/2 teaspoons lemon juice
1/2 teaspoon worcestershire sauce
fish steps:
1. preheat oven to 350 degrees. grease a shallow baking dish. arrange fillets in dish and sprinkle with seasoned salt and pepper.
2. in a small skillet over medium heat, melt butter. stir in bread crumbs; sprinkle over fish. bake 15 minutes or until fish flakes easily when tested with a fork.
sauce steps:
1. in a cup, combine all ingredients. serve with fish.

1 1/2 cup stuffing mix (fine)
1/4 cup grated parmesan cheese
1 package chopped frozen spinach - squeezed dry
3 eggs - beaten
1 cup sour cream
1 can cream of shrimp soup
1 teaspoon lemon juice
steps:
1. lay fillets out. in a large bowl combine stuffing mix, parmesan cheese, spinach and eggs. make rolls by placing a small amount of stuffing on each fish fillet and rolling up.
2. place fish, seam side down, in a casserole dish. mix sour cream, soup and lemon juice together; pour over fish. back at 350 degrees for 30 minutes.

greek baked ocean perch

ingredients:
1/3 cup onions - finely chopped
2 tablespoons olive oil
2 garlic cloves - minced
1/4 cup dry white wine
1/8 teaspoon dried thyme
1/8 teaspoon dried oregano
1 16-ounce can whole tomatoes - drained, chopped fine and 1/4 cup liquid reserved
3/4 pound ocean perch fillets
1/3 cup feta cheese - crumbled
steps:
1. in a skillet cook onion in oil over moderately low heat, stirring until softened. add garlic and cook, stirring, 1 minute.
2. add wine and boil the mixture until almost all the liquid is evaporated. add the thyme, oregano and tomatoes with reserved liquid. bring mixture to a boil and cook it over moderate heat, stirring, occasionally, 5 minutes, or until it is thickened slightly.
3. spread half the sauce in the bottom of a gratin dish just large enough to hold the fish in one layer. top it with the perch, skin dies down, and spread remaining sauce over perch.
4. sprinkle feta evenly over the sauce and bake 15 - 20 minutes at 400 degrees or until the fish just flakes when tested with a fork.
