crust steps:
1. preheat oven to 350 degrees. in a bowl of a food processor, combine the flour, sugar, and salt. add the butter and pulse until the mixture resembles a coarse meal. combine the vinegar and ice water. slowly add the ice water to the flour mixture and pulse until mixture just comes together. divide into two portions and wrap in plastic wrap. refrigerate for at least 30 minutes.
filling steps:
1. in a medium saucepan over medium heat, combine the butter and chocolate chips. melt, stirring frequently, until chocolate and butter are melted and smooth. remove from heat.
3. in a second bowl, combine the pumpkin, evaporated milk, eggs, sugar, vanilla, cornstarch, cinnamon, ginger, nutmeg and salt. stir until well combined and smooth. add the chocolate butter mixture to the pumpkin mixture, stirring until smooth and well combined.
4. remove one of the dough portions from the fridge. roll out onto a lightly floured surface into a 1/4-inch thick circle. transfer to a 9-inch pie pan. crimp the edges with your fingers. pour the filling mixture into the unbaked pie shell. bake for 55 - 60 minutes or until the edges are set and the center is still slightly jiggly. cool for 30 minutes on wire rack. refrigerate for at least 8 hours.
5. before serving, drizzle with melted chocolate.

pumpkin & white bean bisque with manchego toasts

1 medium yellow onion - diced
5 cloves garlic - smashed
2 1/2 tablespoons salted butter
1 15-ounce can white beans - drained and rinsed
1 15-ounce can pureed pumpkin
2 1/2 cups chicken broth
1/3 cup heavy cream
1 tablespoon apple cider vinegar
1 teaspoon dried sage
1/4 teaspoon cumin
1/2 teaspoon pepper
1 teaspoon salt
ciabatta bread - thinly sliced
manchego cheese - shredded
olive oil
fresh thyme - garnish
steps:
1. set a heavy bottomed pot to medium heat. add the butter, onion, and garlic to the pan and saute for 8 - 10 minutes until softened. add the sage and cumin, and stir to combine. add 1/2 cup of the chicken broth and heat for a few more minutes, scraping any brown bits off the bottom of the pot.
2. move onion mixture to a blender. add in beans, pumpkin and remaining chicken broth. if this is too much liquid, do it in batches. puree until very smooth. once pureed, return onion, pumpkin, and bean mixture to the pot. add salt and pepper and bring to a simmer. let soup simmer for 10 - 15 minutes while you prepare the toasts.
3. set the oven to broil. place the bread on a baking sheet. cover generously with cheese, drizzle with olive oil, and sprinkle with a bit of pepper. place under the broiler for 2 - 3 minutes until melted. watch closely as to not burn.
4. right before serving, remove the soup from the heat. stir in the vinegar, and then stir in the heavy cream. serve with toasts and garnish with fresh thyme.

2 slices bacon

1. preheat oven to 375 degrees. cut a small circle around the diameter of the pumpkin to remove the top; set aside. with a spoon, scrape out the seeds and any loose, stringy fibers, but not any of the flesh.
2. over medium high heat in a large saute pan, cook bacon until crispy. drain on a paper-towel lined plate and remove grease from pan. tear into bite-size pieces when cool.
3. in the same pan over medium high heat, add a large tab of butter, a drizzle of olive oil, garlic, whole thyme sprigs and sage leaf. saute for about a minute until garlic is soft. add bread and bacon and season with salt and pepper. cook for about a minute or so until bread is lightly brown and crisp, adding more olive oil if the bread feels too dry.
4. whisk together the broth, cream and a pinch of nutmeg with a pinch of salt and pepper in a bowl.
5. add bread mixture to the pumpkins, pressing them firmly into the bottom. pour the liquid into each pumpkin and replace top. place pumpkins in a small, greased roasting pan and lightly brush the flesh with olive oil. bake for 1 hour until pumpkin flesh is soft but sill holds its shape. remove from oven.
6. remove thyme and sage leaves. gently spoon liquid out of the pumpkin and add to the blender, leaving the bread bits behind. gently spoon out the inside of the pumpkin flesh, being careful not to rupture the structure of the pumpkin, and add to the blender. blend until smooth.
7. meanwhile, add gruyere to the bread pieces in the pumpkins. pour soup on top, garnish with sage leaves and serve.

1 egg yolk
1/2 teaspoon vanilla extract
1/4 cup sugar
5 tablespoons flour
1/2 teaspoon pumpkin pie spice
2 cans pillsbury crescent recipe creations refrigerated seamless dough sheet
1 cup heavy whipping cream
1/8 teaspoon salt
5 tablespoons caramel syrup
4 tablespoons cinnamon sugar
steps:
1. pre-heat oven to 375 degrees. brush 2 large cookie sheets with 2 tablespoons of the melted butter. in a large bowl, beat cream cheese and pumpkin on medium speed about 1 minute or until smooth. add egg yolk, vanilla, sugar, 3 tablespoons of flour and pumpkin pie spice; beat on low speed until blended.
2. lightly sprinkle work surface with 1 tablespoon of flour. unroll 1 can of dough on floured surface with 1 short side facing you. press dough into 14 x 12-inch rectangle. with paring knife, lightly score the dough in half horizontally. lightly score bottom half of dough into 12 squares. spoon heaping tablespoon of the pumpkin filling onto center of each square. gently lift and position unscored half of dough over filling. starting at the top folded edge, press handle of wooden spoon firmly between the mounts and along edges of pumpkin filling to seal. using toothpick, poke small hole in top of each ravioli. cut between each ravioli and place 1 inch apart on cookie sheets. repeat with remaining flour, dough sheet and filling. brush ravioli with remaining 2 tablespoons melted butter. bake 9 - 14 minutes or until golden brown.

3. preheat the broiler. whisk in the pumpkin puree. stir in 2 cups of the cheese until melted. combine the pasta and the sauce and transfer to individual casserole dishes, or one large casserole dish. sprinkle the remaining cheese on top and sprinkle with paprika. broil until the cheese is melted and bubbling. garnish with chopped parsley and serve.

5. knead 1 tablespoon of flour into the dough, deflating it, and recover it. let it sit to relax for 5 minutes. flour a large work surface and urn your rested dough out onto it. roll it out to a 20-inch long and 12-inch wide rectangle, lifting corners periodically to make sure it's not sticking. if it seems to be snapping back, cover it with the damp towel and let it rest for 5 minutes before continuing.
6. spread the browned butter over the surface of the dough with a pastry brush and then sprinkle the sugar mixture over the top, patting it down to ensure it mostly sticks.
7. with the long edge of the rectangle toward you, cut it into 6 strips. stack the strips on top of one another and cut the resulting stack into 6 even portions. place these portions on at a time into a greased loaf pan, pressing them up against each other to fit them all in. cover the pan with a damp cloth and place in a a warm place for 30 - 45 minutes to double in size.
8. while dough rises, preheat oven to 350 degrees. when it's risen, place the load in the center of the oven and bake for 30 - 35 minutes until dark golden brown on top. cool for 20 - 30 minutes on a cooling rack in the loaf pan.

3. heat water, pumpkin puree, vanilla and butter in a large saucepan over high heat, stirring occasionally, until it comes to a boil. remove from heat.
4. quickly stir in flour mixture with a wooden spoon. stir over low heat until mixture becomes doughy.
5. remove from heat again and quickly stir in eggs one at a time until well incorporated. mixture should be smooth.
6. pour vegetable oil into a large pan fitted with a clip-on thermometer, with the oil coming up two inches on the side. heat oil to 350 degrees. when the oil reaches 350 degrees carefully pip dough into the hot oil with one hand and snip the dough with a pair of kitchen scissors in the other. turn the heat down to fry the churros at 325 degrees. be sure to watch the temperature in order to maintain it.
7. depending on the size of the churros, fry for about 4 - 5 minutes, flipping at least once with a fork.
8. when golden brown and done, remove the set on paper towels. pat dry and immediately toss in cinnamon and sugar. serve warm.

1/4 cup finely grated parmesan cheese

1 tablespoon granulated white sugar
4 -5 tablespoons unsalted butter - melted
cheesecake ingredients:
2/3 cup light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
1/4 teaspoon salt
1 pound cream cheese - room temperature
3 large eggs
1 teaspoon pure vanilla extract
1 cup pure pumpkin puree
topping ingredients:
1 cup sour cream
1 teaspoon pure vanilla extract
1/4 cup granulated white sugar
crust steps:
1. in a medium sized bowl combine the graham cracker crumbs, finely ground ginger snap cookies, sugar and melted butter. press the mixture onto the bottom of a buttered spring form pan. cover and refrigerate while you make the cheesecake filling.
cheesecake steps:
1. combine the sugar, cinnamon, ginger, cloves, nutmeg and salt.
2. in a separate bowl, beat the cream cheese on low until smooth, about 2 minutes. gradually add the sugar mixture and beat until creamy and smooth, 1 -2 minutes. add the eggs, one at a time, beating well after each addition. scrape down the sides of the bowl and beat in the vanilla extract and pumpkin puree.
3. pour the filling over the chilled ginger crust and place the spring form pan on a baking sheet to catch any drips. place a cake pan, filled halfway with hot water, on the bottom shelf of your oven to moisten the air. bake the cheesecake for 30 minutes at 350 degrees. then reduce the oven temperature to 325 degrees and continue to bake for another 10 -20 minutes or until the edges are puffed but the enter is still wet and jiggles when you gently shake the pan.
