1. boil potatoes in salted water for 8 minutes. add beans; cook until potatoes are tender and beans are crisp-tender, about 3 minutes. drain. let cool in a large bowl. add tomatoes.
2. whisk shallot, olive oil, vinegar, tarragon, and mustard in a small bowl. toss with potato mixture and season to taste.

roasted carrot, parsnip and potato soup

ingredients:
1 1/2 pounds carrots - peeled and cut in 3/4-inch pieces
1/2 pound parsnips - peeled, quartered, cored and cut in 3/4-inch pieces
1 medium or large red onion - cut in large dice
1 medium Yukon gold potato - quarterey
2 garlic cloves, in the skin
2 tablespoon olive oil
salt
pepper
6 cups chicken stock
chopped fresh herbs - parsley, thyme, tarragon or chives - garnish
creme fraiche or yogurt - garnish
steps:
1. preheat oven to 425 degrees. line a sheet pan or a baking dish with parchment or foil. toss vegetables, including garlic cloves, with olive oil and salt and pepper to taste. spread in baking dish or on sheet pan in an even layer and place in oven. set time for 20 minutes.
2. after 20 minutes, stir vegetables and turn heat down to 400 degrees. roast for another 20 - 30 minutes, or until very tender and caramelized on the edges, stirring every 10 minutes. remove from the heat. you should have about 4 cups roasted vegetables.
3. hold garlic cloves with a towel so that you don't burn your fingers. squeeze out the pulp into a blender. add half the vegetables and 2 cups of the stock. blend until smooth and transfer to a soup pot. repeat with the second half of the roasted vegetables. transfer to the pot and whisk in remaining broth. season to taste with salt and pepper and heat through. serve each bowl with a sprinkle of chopped fresh herbs and a swirl of creme fraiche.

seared lamb with a smoky slather

1. combine tea, cumin, salt, pepper, garlic, thyme leaves and olive oil, and mix well. place lamb in a dish and rub half the tea mixture on one side. turn it over and slather the second side. if possible, set aside at room temperature up to 3 hours.
2. heat oven to 450 degrees. place turnips and potatoes in a saucepans of salted water, bring to a simmer and cook until tender, 15 - 20 minutes.
3. as turnips and potatoes cook, place a large, heavy, ovenproof skillet, preferably cast iron, on the stove over high heat for 2 - 3 minutes. turn lamb and place pan in the oven. roast for 12 - 15 minutes.
4. remove lamb to a cutting board. place skillet back on stove. drain turnips and potatoes, place in skillet and briefly roll them in the pan drippings to pick up some color. transfer them to a bowl., cover and keep warm.
5. add wine to skillet and cook on medium, scraping the pan, until it's somewhat reduced. whisk in butter, season with slat and pepper ant turn off heat. slice lamb and arrange on a large platter. spoon turnips and potatoes around it. briefly reheat the sauce, spoon it over the meat, drop a few sprigs of thyme on top and serve.

1 large onion - chopped

5 cups vegetable broth
2 1/2 cups water
1 bay leaf

8 cups kale - coarsely chopped
3 small yukon gold potatoes - washed and diced
1/2 cup strawberry tomatoes - quartered
1/3 cup shaved parmesan cheese - garnish

1. place rinsed kidney beans in a medium pot. cover with water until they are completely submerged, leaving 2-inches of water above them. place over medium-high heat, stirring occasionally, until boiling. take off heat and let sit uncovered for 1 1/2 hours. drain and rinse well. set aside.

ingredients:
5 pounds potatoes
3/4 cup flour
10 cups milk + more as needed
2 teaspoons salt + more as needed
1 teaspoon pepper + more as needed
2 cups sour cream - divided
1/2 pound bacon - cooked and chopped
1/2 cup thinly sliced chives
1 1/2 cups shredded cheddar cheese
steps:
1. preheat oven to 400 degrees. pierce each potato with a fork and then place on a baking sheet. bake for approximately 1 hour, until the potatoes are tender. cool them completely. when the potatoes are cool, slice them in half and use a scoop out the pulp. discard skins and roughly mash the potatoes.
2. in a large soup pot, combine the flour and 2 cups of milk. whisk to thoroughly combine and then slowly stir in the rest of the milk. cook over medium heat, for about 5 - 10 minutes, until the mixture thickens slightly. add the potatoes, salt and pepper and turn the heat to low. cook the soup without boiling, stirring frequently, for about 10 minutes. stir in the sour cream and cook about 3 more minutes. taste and adjust the salt and pepper to taste.

48 small clams, well rinsed
1 tablespoon olive oil
1 tabespoon butter
2 cups diced onion
2 cups diced leek
salt

2 bay leaves
1 large thyme sprig
6 ounces thick-sliced smoked bacon
2 pounds potatoes - peeled and diced
1/2 pound spinach - cooked briefly, squeezed dry and chopped
8 tablespoons creme fraiche
zest of one small lemon
2 tablespoons chopped dill
1/2 cup thinly sliced scallions
steps:
1. put clams in a large deep skillet and add 4 cups water. cover tightly with lid and bring to a boil over high heat. reduce heat to medium-high and continue cooking until all calms have opened, about 5 minutes. remove lid and let clams cool. shuck clams, discarding shells, and reserve in small bowl. strain broth through a fine-meshed sieve. keep warm over low heat.
2. put olive oil and butter in a wide heavy-bottomed soup pot over medium-high heat. add onion and leek, season with salt, pepper and a pinch of cayenne, and cook until softened, about 5 minutes. add bay leaves and thyme sprig and cook for 5 minutes more.
3. meanwhile, bring 1 cup water to a boil in a small pot. cut bacon crosswise into 1/2-inch lardons. simmer lardons for 2 minutes, then drain. add lardons to soup pot, along with potatoes. season generously, stir to coat and cook for 1 minute.
4. add 3 1/2 cups warm clam broth and bring pot to a boil. reduce to a simmer and cook until potatoes are tender, about 7 - 10 minutes. check seasoning.

smashed potatoes with eggs and rosemary vinaigrette

1 pound small red bliss potatoes - peeled
salt
2 sprigs fresh rosemary
3 colves garlic
juice and grated zest of 1/2 lemon
3 tablespoons olive oil
pinch crushed red chile flakes
grape seed or canola oil for frying
1 tablespoon white vinegar
2 - 4 large eggs
steps:
1. boil potatoes in salted water with 1 sprig of the rosemary and 2 cloves of garlic until tender. drain potatoes and discard rosemary and garlic. place potatoes on a cutting board and use the side of a cleaver or the bottom of a pot to lightly crush them, keeping them as intact as possible.
2. strip leaves from remaining rosemary sprig and chop. mince remaining garlic clove. place in a dish with lemon juice and zest and whisk in olive oil and chile flakes. season with salt. heat oven to 200 degree.s line a small baking sheet with a couple of layers of paper towels.
3. heat grape seed oil on medium-high to a depth of 1/2-inch in a skillet large enough to hold potatoes in a single layer. when oil is hot, add smashed potatoes and fry, turning once, until golden brown and crusty. season with salt, transfer to baking sheet and place in the oven.
4. bring an inch or so of water to a simmer in a shallow 2-quart saucepan. add vinegar. break an egg into a teacup and slip the egg out of the cup and into the water. repeat with additional eggs. simmer until just set, about 3 minutes. divide potatoes between to warm plates, give the vinaigrette another whisking and drizzle about half of it over the potatoes. use a slotted spoon to life eggs from the water and place onto the potatoes. drizzle eggs with the rest of the vinaigrette and serve.

1. salt the fish and set aside at room temperature. begin heating the oil to 350 - 360 degrees. turn the oven to warm. place a wire rack on a cookie sheet and place on the oven.
2. mix the flour, vegetable oil, salt and beer together, continually stirring. place in the fridge for 20 minutes.
3. meanwhile, slice the potatoes and put them into a large bowl of cold water. when done slicing all of the potatoes, remove them from the water and pat them dry with a paper towel.
4. begin frying the potatoes, a few at a time, for 3 - 5 minutes, or until they start to brown at the edges. don't cook them until they are uniformly brown or they will be overcooked. salt each batch the moment it comes out of the fryer. store each batch on the wire rack in the oven.
5. when the potatoes are done, take the batter out of the fridge. dredge the fish in the batter and let the excess drip off for a second or two. lay each piece gently into the hot oil. do this by letting the bottom end of the piece of the fish fry for a second or so in the oil before you let the whole piece into the oil.

no-thyme quick chicken with smash bro-o-tatoes and gouda gravy

1. place the potatoes in a large pot and cover with cold water. bring to a boil, salt the water, reduce the heat a bit, and cook until tender, about 12 minutes. after 6 minutes, add the broccoli to the pot.
2. season the chicken breasts with the thyme, salt, and pepper. heat the olive oil in a skillet over medium-high heat and cook the chicken for 6 minutes on each side.
3. add the broccoli to the potatoes and cook for 6 minutes.
4. heat the butter in a small sauce pot over medium heat. when the butter has melted, add the flour and cook for 1 minute, then whisk in the chicken stock and 1 cup of the milk. thicken for 2 - 3 minutes, season the sauce with salt and pepper, then stir in the cheese in a figure-eight motion with a wooden spoon for 2 minutes, or until the cheese is melted. turn off the heat.
5. drain the cooked broccoli and potatoes and return to the hot pot to dry them out. mash the broccoli and potatoes together, using the remaining milk to reach the desired consistency. season with salt and pepper. slice the chicken breasts on an angle. pile some mashed broc-o-tatoes on plates and arrange the fanned-out chicken on the edge of the mound. pour the gouda gravy over the top.

crab tater tots

2 tablespoons unsalted butter
1/4 cup flour
1 large egg
1 cup mashed potatoes
canola oil
1/2 pound lump crab meat
panko bread crumbs

steps:
1. in a small saucepan, combine the butter with 1/4 cup water over high heat. when the water comes to a simmer and the butter is melted, add the flour. reduce the hat to medium and stir until the resulting paste pulls away from the sides of the pan, 1 - 2 minutes. remove from heat. allow to cool for 5 minutes. add the egg to the pan and stir vigorously until the egg is incorporated into the flour mixture. stir in the mashed potatoes and let cool.
2. pour enough oil into a medium pot so that the oil comes 3 inches up the sides. heat the oil to 350 degrees.
3. while the oil heats, gently fold the crab into the potato mixture, the lumpier the batter, the better. using two soup spoons, shape the mixture into quenelles, or 2-inch footballs. roll in the panko. deep-fry, working in batches and turning once, until crisp, brown and heated through, 2 - 3 minutes. drain on paper towels and season with salt.
