walleye in puffed pastry

prep time:  tbd

ingredients:
1 package frozen puff pastry - thawed according to directions
4 tablespoons butter - melted
4 tablespoons dry white wine
12 ounces skinless walleye fillets - cut into 3-ounce portions
salt
pepper
2 tablespoons chopped parsley
1 large egg - beaten
2 tablespoons milk

steps:
1.  preheat oven to 350 degrees.  on a lightly floured surface, roll out on of the puff pastry sheets with a rolling pin to make it large enough to cut out 2 circles approximately 8-inches in diameter.  repeat with second sheet of puff pastry, cutting 2 more circles.

2.  combine the butter and wine.  lay out the circles on a lightly floured board.  brush the centers of the circles with butter mixture, leaving 1-inch boarder around the edges.

3.  place the walleye portions on the lower half of each circle and season lightly with salt and pepper.  sprinkle with parsley.

4.  whisk the egg into the butter mixture and brush the edges of the circles.  fold over the tops of the circles and seal by making overlapping folds or pressing with the tines of a fork.  use a spatula to place the puff pastry packages on an ungreased baking pan.

5.  whisk the milk into the egg mixture and glaze the pastries being careful not to let the glaze run off the edge of the pastry.

6.  bake pastry for 40 - 45 minutes or until puffed and golden brown.

ingredients:
1 pound chopped walleye
1 small can crab with liquid
1 stick of butter - melted
2 - 3 green onions - chopped
1/4 skinned red pepper - chopped
1/4 - 1/2 cup parsley - chopped
1/4 cup mayonnaise (optional)
1 egg - beaten
1/2 cup seasoned bread crumbs + more for rolling

steps:
1. mix all ingredients and roll in bread crumbs.

2. place on a greased cookie sheet. back at 350 degrees for 15 minutes, flipping once, until golden brown on both sides.

3. divide and serve.

alternative steps:
1. mix all ingredients. roll into balls about the size of a small lime. roll in bread crumbs.

2. drop balls into deep fryer and cook for 3 minutes. drain on paper towel. serve.

sam's supper club's stuffed walley with seafood sauce

cook time:  20 minutes
servings: 6

sauce ingredients:

1 cup butter
3/4 cup flour
2 cups milk
1 can small shrimp - drained
1 cup crab
1 teaspoon lemon and her seasoning
1/2 teaspoon dill weed
2 tablespoons white wine
salt
pepper


dressing ingredients:
6 large walleye fillets
1 bag bread cubes
1 egg - whipped
1/2 teaspoon dill weed
1/2 teaspoon lemon and herb seasoning
2 teaspoon sage
2 cups chopped onion

sauce steps:
1.  melt butter and add flour; simmer for 1 minute stirring constantly.  add milk; stir until mixture thickens (on medium heat). 

2.  add shrimp, crab, lemon and herb seasoning, dill weed white wine, and salt and pepper to taste.  set aside.

dressing steps:
1.  mix all ingredients together except walleye.

2.  skin walleye fillet.  cut fillet in half, place fat pieces on bottom of greased casserole dish.  add bread mixture and top with tail piece of fillet.  bake for 20 minutes at 400 degrees.

3.  pour sauce over baked fillet.  garnish with fresh lemon and parsley.

broccoli fish bake

prep time:  30 minutes
cook time:  1 hour
servings:  6-8

ingredients:
1 cup sour cream
1 cup miracle whip
1 tablespoon dried onions
2 teaspoons lemon-garlic pepper seasoning
1/4 teaspoon ground white pepper
1 tablespoon celery flakes
1 tablespoon parsley flakes
2 teaspoons lemon juice
dash of salt
dash of pepper
20 ounces broccoli cuts
3 tablespoons liquid butter
2 tablesppons lemon juice
6-8 walleye fillets
1/4 cup bread crumbs

steps:
1.  mix first 10 ingredients and set aside. 

2.  spread broccoli in shallow casserole dish and drizzle with 2 tablesspoons butter and 1 tablespoon lemon juice. 

3.  layer fillets on broccli, then spread the sour cream mixture.

4.  top with sprinkled break crumbs and remaining butter and lemon juice.

5.  bake at 350 degrees covered for 45 minutes.  uncover and back an additional 15 minutes until brown.
