ingredients:
1/4 cup butter
1/2 cup chopped onion
3 tablespoons flour
1/2 teaspoon oregano
1/4 teaspoon salt
1/8 teaspoon pepper
4 cups milk
1 1/2 cup chicken broth
1 1/2 cup diced cooked potatoes
1 package frozen whole kernel corn
8 ounces thinly sliced kielbasa
steps:
1. melt butter in a 4 quart pot. saute onion until tender, about 3 minutes.
2. stir in flour and seasonings, until smooth. remove from heat and gradually stir in milk and broth. bring to a boiling, stirring constantly. boil and stir one minute.
3. add potatoes, corn and sausage. heat thoroughly. serve.

brat kabobs

ingredients:
1/2 cup soy sauce
1/4 cup apple juice concentrate
3 tablespoons spicy mustard
2 medium sweet red pepper - cut into 1-inch pieces
1 medium yellow summer squash - cut into 1/2-inch cubes
1 medium onion - cut into wedges
1 package johnsonville fresh original bratwurst - cut into 1/2 slices
metal or wooden skewers
steps:
1. in a large resealable plastic bag, combine the soy sauce, apple juice concentrate and mustard. add vegetables. seal bag and refrigerate 1 hour.
2. place brats in large sauce pan and add enough water to cover brats. parboil on medium-high heat for about 10 minutes. remove from pan and allow to cool slightly.
3. slice each brat into 5 equal pieces and thread onto metal or soaked wooden skewers, alternating with vegetables. brush with reserve marinade and grill over medium heat until vegetables are tender and brats are golden brown turning and basting frequently with reserved marinade. serve immediately.

bayou jambalaya

ingredients:
3 tablespoons olive oil
1 cup chopped onion
1 tablespoon minced garlic
1/2 cup diced red or yellow bell pepper
1 cup long-grain rice (preferably basmati)
1 teaspoon cayenne pepper
1/2 cup chopped green onions
1/4 cup chopped cilantro
1 3/4 cup chicken broth
1 14-ounce can chopped tomatoes with juice
2 bay leaves
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme
1 1/2 cup cooked, dark meat chicken
1/2 pound cooked spicy louisiana sausage or kielbasa - diced
12 medium shrimp
1/2 cup chopped parsley or green onion (for garnish)
steps:
1. heat oil in rice cooker and saute onion, pepper and garlic for 3 - 4 minutes to soften.
2. add rice and stir to coat.
3. add remaining ingredients, except parsley. cover and cook, stirring once or twice, until the rice cooker turns off (about 24 minutes).
4. let rest of 2 -3 minutes. serve topped with chopped parsley.
