ingredients:
8 veal cutlets - pounded to 1/8-inch thick
salt
pepper
16 sage leaves
8 slices prosciutto
1 cup flour
5 tablespoons olive oil
1/2 pound mixed mushrooms - chopped
1 large shallot - finely chopped
2 cloves garlic - finely chopped
1 cup marsala
1/2 cup chicken stock
3 tablespoons butter
1 large bundle asparagus - trimmed
2 tablespoons chopped parsley
steps:
1. preheat oven to the lowest setting. add a platter and 4 dinner plates; let warm.
2. season the veal on both sides with salt and pepper. place 2 sage leaves on top of each cutlet, then wrap slice of prosciutto around. place the flour on a large plate and dredge the cutlets lightly shaking off the excess flour.
3. in a large skillet, heat 2 tablespoons olive oil over medium-high heat. add half the cutlets and cook, turning once, until golden and cooked through, 2 - 3 minutes per side. transfer to the warm platter and repeat with 2 tablespoons of olive oil for the remaining cutlets.
4. add the remaining 1 tablespoon olive oil to the skillet. add the mushrooms and cook, stirring often, until brown, 7 - 8 minutes. add the shallot and garlic, stir 1 minute then add the marsala. increase the heat to high and boil until the sauce is reduced by half, about 4 minutes. add the stock and butter and remove from heat. stir until the butter melts and the sauce thickens.
5. in another large skillet, bring a few inches of water to a boil. salt the water, add asparagus, and cook until crisp tender, about 3 minutes.
6. divide the cutlets among the warm plates. top with marsala mushrooms. garnish with chopped parsley.

scampi with cherry tomatoes

venison meat pies

servings: 3 6-inch pies
ingredients:
1/4 cup flour
2 cups bread flour
1 teaspoon salt
3/4 cup warm water
1 yeast packet
1 tablespoon butter
12 ounces ground venison
6 cloves garlic - chopped
2 tablespoons fresh oregano - chopped
2 tablespoons fresh parsley - chopped
2 tablespoons green onion - chopped
2 teaspoon salt
1 teaspoon pepper
3 tablespoon butter
1 egg
steps:
1. mix the flours and salt together in a large bowl. mix the yeast and the warm water in a cup and let hydrate for 15 minutes. meanwhile, mix the butter into the flour with your hands until it looks like coarse meal.
2. pour the hydrated yeast into the flour and mix well. knead for 5 minutes, cover in plastic rap, and let rest 1 hour.
3. meanwhile, combine venison, garlic, oregano, parsley, green onion, salt and pepper in a bowl.
4. preheat oven to 475 degrees. roll the dough into a rough log and slice off 1/3 of it. cut each piece into thirds. take out one of the pieces form the larger portion of dough and keep the rest covered with a damp cloth.
5. roll out the dough into a 6-inch circle about 1/8-inch thick. use a bowl or large glass to cut a perfect circle. put some of the filling into the center of the circle, leaving about 1 inch border on all sides. set that dough onto a baking sheet lined with parchment. do the same with the other 2 larger pieces of dough. when you have all three pies set out, press 1 tablespoon of butter onto the center of the filling of each pie.
6. to make the tops of the pies, roll out each smaller piece of dough to about the same thickness, about 5-inches in diameter. lay the top on the venison filling. take up the bottom of the larger piece of dough and attach it to the top piece of dough by pinching and crimping it over. do this all around the pie to seal it. with a very sharp knife slice vents in the to top of the pie.
7. beat the egg with a little water and paint all the pies with it. bake in the oven for 20 - 25 minutes or until they are golden brown. let the pies rest on a rack for at least 10 minutes before eating.

1 clove garlic - smashed
2 tablespoon finely chopped parsley

pinch crushed red pepper flakes
3 lemons - juiced and 1 lemon zested

1/2 cup dijon mustard
4 trout - boned, belly flap removed, rinsed and patted dry (heads and tails left on)
olive oil
steps:
1. in a wide flat dish, combine the bread crumbs, garlic, parsley, oregano, red pepper flakes, zest, and salt to taste.
2. in a small bowl, mix together the mustard and the juice of 1 lemon. brush both sides of the trout with mustard mixture. coat the fish on both sides with the seasoned bread crumbs and press firmly to adhere the crumbs to the fish.
3. preheat oven to 250 degrees. coat a large skillet with about 1/4 - 1/2-inch olive oil and bring to a medium-high heat. add the fist to the pan, skin side down, and cook the fish 2/3's of the way, about 6 - 7 minutes. carefully turn the fish over and cook the other side until the fish is brown and crispy, about 2 - 3 minutes. dry fish on paper towels and reserve to warm oven.

3 pheasants - innards removed, wing tips and necks trimmed
salt
pepper
1 onion - coarsely chopped
1 carrot - coarsely chopped
1 orange - halved
3 sprigs fresh thyme
6 slices thick-cut bacon - cut in half
1/4 cup madeira
1 cup chicken stock
2 tablespoons unsalted butter - cold
steps:
1. preheat oven to 500 degrees and position the oven rack in the bottom third of the oven. season the cavities and the outside of each pheasant liberally with salt and pepper. divide the chopped onion and carrot equally among the cavities of the pheasants. squeeze the juice form both halves of the orange and set aside. cut 1 of the squeezed halves into 3 pieces and tuck inside the cavities along with the vegetables. insert 1 sprig of thyme into the cavity.
2. arrange the pheasants in a large roasting pan, breast sides up. lay 2 strips of bacon over the top of each pheasant, butting the bacon into pieces if necessary to cover as much of the pheasant as possible. roast for 15 minutes, then remove the bacon strips and continue roasting for approximately 30 - 40 minutes or until the juices run clear. remove the pheasants from the oven and transfer to a serving platter; loosely tent.
3. using a spoon, carefully remove excess fat from the pan. place the roasting pan over high heat and when hot, deglaze with the reserved orange juice and madeira, using a wooden spoon to scrape any brown bits from the bottom. when the orange juice and madeira have reduced by half, add the chicken stock and continue to cook until sauce has reduced enough to coat the back of a spoon, about 3 - 4 minutes. swirl in the butter and remove from the heat. season to taste with salt and pepper.
4. remove the back bone from each pheasant, then cut along the breastbone to divide the birds into two halves. service 1/2 pheasant per person, napped with some of the sauce.

15 whole black peppercorns
1 bunch fresh thyme
4 cloves garlic- smashed
1 5 1/2 - 6-pound duck
2 handfuls shredded chard
2 shallots - minced
dash sherry or balsamic vinegar
steps:
1. combine all ingredients, except duck, in a plastic container with a lid. place the lid on the container and shake to dissolve the salt.
2. remove the liver, gizzards, and heart from the duck. cut off wings. locate the spine at the base of the neck and cut, with kitchen shears, up the line of the backbone towards the neck cavity. turn the duck and cut straight towards the rear cavity; remove backbone.
3. turn the duck over and cut straight down the middle of the breast bone, leaving 2 equal duck halves. to separate the legs from the breast, flip your halves over so the flesh side is facing up at you. using the knife, make a crescent shape cut between the leg and the breast. lay your knife flat against the skin and make 3 marks in one direction and then in the other, making an x. make sure that you are cutting through the skin and not the meat.
4. line the inside of a pot with a zip-top bag. place the duck quarters inside the bag, and pour the brine over the duck. seal the bag, ensuring that all air is removed from the bag. brine the duck for 2 - 2 1/2 hours in the refrigerator.
5. bring 1 1/2 - 2 inches of water to a boil in a large pot. place a colander into the pot and line the sides of the colander with the duck. do not stack the duck quarters on each other. cover and turn the heat to medium low. steam the duck for 45 minutes. set oven to 475 degrees. place a large cast iron skillet into the oven.
6. remove the duck pieces from steamer and place legs, skin skid down, into the hot skillet. place the skillet into the hot oven immediately and cook the leg quarters for 10 minutes. add the breasts, skin side down, and cook for 7 more minutes or until the duck takes on a deep mahogany color and the skin is very crisp.
7. remove the duck from the skillet and rest under foil. add the chard and shallots to the skillet. toss the chard in the fat until it barely wilts. season with the sherry. serve with the duck.

2 tablespoon unsalted butter
2 tablespoon flour
1/4 teaspoon + a pinch of salt

8 ounces fresh mozzarella - sliced

roasted garlic steps:
1. preheat oven to 350 degrees. place garlic on a foil-lined baking sheet and rub 1 teaspoon of oil into the top of each head. sprinkle lightly with salt and pepper and place, out side down, on the baking sheet.
2. bake until the cloves are soft and golden, about 1 hour. remove from the oven and let sit until cool enough to handle. carefully remove each clove of garlic from the heat. squeeze each head of garlic to expel any cloves that you cannot remove individually. set aside.
parmesan pizza dough steps:
1. in a large bowl, combine the water, yeast, honey, and 1 tablespoon oil, stirring to combine. let sit until the mixture is foamy, about 5 minutes.
2. add 1 1/2 cups of the flour and the salt, mixing by hand until it is all incorporated and the mixture is smooth. continue adding the flour, 1/4 cup at a time, working the dough after each addition, until the dough is smooth but sill slightly sticky. turn the dough out onto a lightly floured surface and knead until smooth but still slightly tacky, 3 - 5 minutes.
3. oil a large mixing bowl with remaining olive oil. place the dough in the bowl, turning to coat with the oil. cover with plastic wrap and set in a warm place, free from drafts until doubled in size, about 1 1/2 hours.

chicken enchilada pie

2 pounds chicken breast - cut into 2-inch pieces
2 medium white onions
1 tablespoon olive oil
2 teaspoons cumin
1/2 teaspoon red cayenne pepper
2 red bell peppers
2 yellow squash
1 can yellow corn
1 can black beans
1 package corn tortillas
1 large can red or green enchilada sauce
2 small packages of jiffy cornbread mix (with 1 egg and milk specified on the box)
16-ounces shredded cheese
salt
pepper
35 - 40 charcoal coals
steps:
1. cook chicken with onions, oil, cumin, cayenne pepper, and salt and pepper to taste.
2. add peppers and squash. cook for about 5 - 10 minutes; set aside. prepare the cornbread mix according to package. light coals for dutch oven.
3. add corn and black beans to chicken mixture. cook until warmed through.
4. pour 1 cup enchilada sauce in the bottom of the dutch oven. add a layer of chicken mixture and place a single layer of corn tortillas on top. repeat layers until all chicken mix is used. pour the liquid mixture of cornbread on top of the layers. spread cheese on top.

duck confit with green salt

2. place the duck fat and legs in a large saucepan over medium high heat, simmer for about 30 minutes, until a fork plunges easily into the thigh. transfer the legs into a sealable container and pour the duck fat overtop so they are submerged. cool completely.
3. remove the legs from the fat and scrape off any excess. place the legs in a large frying pan over medium heat. let the duck legs brown on both sides, about 5 minutes on each side.
