salt steps:
1. put peppercorns, cloves, allspice and sage in a spice mill or mortar and grind to a powder. remove to a bowl and stir in salt. season pork chops on both sides with salt mixture. cover and leave chops at room temperature to absorb seasoning for at least 30 minutes.
pork steps:
1. peel, quarter and core apples, then cut each apple into 12 wedges. melt 1 tablespoon butter in a wide skillet and raise heat to medium-high. add apple wedges in one layer and brown gently on one side, about 2 minutes. brown on the other side and cook for 2 minutes more, or until apples are cooked through but sill firm. remove apples from pan and keep warm.
2. add 1 tablespoon butter to pan and swirl to melt. dust pork chops with flour, and place in pan and brown gently for about 4 minutes per side. adjust heat if necessary to keep pork from cooking too quickly. remove chops and keep warm on a platter in a low oven. discard remaining butter.
3. add 1/2 cup cider to pan, raise heat to high and cook down to a syrup. add mustard and chicken broth, and bring to a boil, then reduce heat to a simmer. add potato starch and stir with a wire whisk as the sauce thickens. stir in creme fraiche. season to taste with remaining spiced salt. add 2 tablespoons cider and the calvados. cook for 1 minute more.
4. spoon sauce over the chops, then spoon the apples around the platter. sprinkle with chives and parsley.

caramel apple cheesecake bars

1. preheat oven to 350 degrees. line a 9 x 13 inch baking dish with aluminum foil. in a bowl, combine the 2 cups flour with 1/2 cup brown sugar. add 2 sticks of butter and use a fork of pastry blender to mix until crumbly. press into the aluminum lined dish. place in the oven until golden brown, about 15 minutes.
2. in a mixing bowl, combine the cream cheese and 3/4 cup sugar. beat until smooth. add the eggs one at a time, beating the mixture between each. add the vanilla and mix. pour over the baked crust.

apple honey cake

2 apples - peeled, cored and sliced thin
2 cups self-rising flour (For each cup of all-purpose flour, add 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt.)
1 1/2 sticks sweet butter
3 ounces honey
3 eggs - beaten at room temperature
1/2 cup milk
steps:
1. preheat oven to 350 degrees. grease a deep 8” diameter cake pan with the melted butter. combine 1/2 teaspoon cinnamon with 1 tablespoon of the sugar and sprinkle over the bottom and sides of the pan.
2. line the base of the pan with the apple slices, overlapping them so there are no gaps for the cake mixture to seep through.
3. sift the flour with the remaining cinnamon, nutmeg and cloves.
4. cream the butter with the sugar until it is light and fluffy. Gradually pour in the honey in a stream, beating continuously. add the eggs, one at a time, to prevent curdling.
5. on low speed or by hand, add 1/3 of the flour, 1/2 the milk , another 1/3 of flour, the rest of the milk, finish with the flour.
6. pour the mixture into the greased and sugared pan and bake for 40 to 45 minutes or until a cake tester comes out clean and dry. (bake at least 40 minutes to caramelize the apples)
7. allow to cool for 15 minutes, then turn cake out onto a cooling rack. The apples should be caramelized and the cake a rich golden brown.

roasted delicata and quinoa

2 delicata squash - halved and seeded
1 tablespoon extra virgin olive oil
salt
pepper
1 cup cooked quinoa
1 tablespoon apple cider vinegar
1 apple - finely diced
1 shallot - minced
1 garlic clove - minced
chopped parsley
2 cups arugula
steps:
1. roast the delicata in the oven at 350 - 400 degrees until tender and sweet.
2. cook the quinoa until water is absorbed and fluffy and toss with vinegar, apples, shallots, garlic and herbs. mix with lightly steamed arugula and serve on top of the squash halves.

2 teaspoons brown rice syrup
1 teaspoon cinnamon

1. preheat oven to 350 degrees. in a large baking dish, layer the squash (1 - 2 layers high). cover with apples.
2. crumble or drizzle the coconut butter over the top evenly. drizzle the 2 teaspoons brown rice syrup evenly over the top and add the cinnamon evenly as well.

all day beer stew

ingredients:
12 ounce can of beer
1 cup beef bouillon
2 pounds tougher steak - cubed
3 tablespoons oil
1 large yellow onion - sliced
1 gala (or other sweet apple) - chopped
1/2 cup apple cider vinegar
2 pounds red potatoes - chopped
2 cups red cabbage - chopped
2 teaspoons dried leaf thyme
1 teaspoon bacon bits
1 teaspoon coarse ground black pepper
1 teaspoon salt
steps:
1. start the slow cooker on high. pour in the beer and bouillon.
2. in a large skillet, brown the steak chunks on all sides in 2 tablespoons of the oil starting on high heat. reduce the heat to medium when the meat is turned. transfer the meat to the slow cooker as it browns.
3. add the third tablespoon of oil and brown the onions and apple chunks until soft (about 7 minutes). add them to the pot.
4. deglaze the pan with the apple cider vinegar, letting it simmer enough to reduce to about 1/4 cup. scrape the pan and drippings into the pot.
5. add the rest of the ingredients to the slow cooker, reduce the heat to low, cover and cook 8 hours.

3 (10 inch) flour tortillas (white or whole wheat)
6 ounces brie cheese - rind removed and cut into 1/4 inch thick slices
1 fuji apple - cored, peeled and cut into 1/4 inch thick slices
3 cups arugula
3/4 teaspoon freshly ground black pepper
steps:
1. combine mustard and cider in a small bowl; stir well.
2. heat a large nonstick skillet over medium heat. spread each tortilla with about 1 1/2 teaspoon of the mustard mixture. place one tortilla mustard side up, in pan.
3. arrange one-third of cheese slices over half of tortilla; cook 1 minute or until cheese begins to melt.
4. arrange one third of apple slices over cheese; top with 1 cup of arugula. sprinkle with 1/4 teaspoon pepper.
5. fold tortilla in half, press gently with a spatula.
