1. slightly warm the milk and pour into the bowl of stand mixer fitted with the dough hook. add the yeast and whisk by hand to combine. add the flours, sugar, salt, and eggs. mix on low speed until the dough comes together, 1 -2 minutes.
2. increase the mixer speed to medium-high and work the dough for 6 minutes. pause about every minute to push the dough back down into the bowl and off the hook. reduce the mixer speed to low and slowly add the butter, a little at a time,k over the course of 2 minutes. pause halfway through to scrape down the bowl and hook. when the butter begins to blend in, increase the mixer speed to medium-high to fully incorporate the butter and bring the dough back together, 4 - 6 minutes longer.
3. transfer the dough to a greased sheet pan, cover with plastic wrap, and refrigerate for at least 1 hour.
4. divide the dough into two equal balls, about 11 ounces each. transfer to a greased sheet pan, wrap in plastic and refrigerate overnight.
5. grease a 5 x 9-inch loaf pan. work with one dough ball at a time. first flatten into a disc, then left an edge and press it into the center. work around the circumference, pressing every edge into the center until a ball forms. flip the ball over so the pleated side is down and the smooth side is up. cup the dough in your palm and massage the seam side of the dough firmly against the work surface in a circular motion, allowing the friction to seal the seams. set aside and cover with plastic wrap or a slightly damp kitchen towel while shaping the other ball.
6. place the balls into the loaf pan, cover loosely with plastic and allow to rise in a warm place until more than double in size, about 3 - 5 hours.
7. as the dough nears readiness, preheat your oven to 350 degrees. carefully brush the dough with the egg wash, making sure the egg doesn't pool around the edges. bake until golden, about 35 minutes. allow to cool for about 10 minutes in the pan, then transfer to a cooling rack.

1. preheat oven to 435. drizzle olive oil over a baking sheet. place the tomatoes on the baking sheet and drizzle tomatoes with olive oil. sprinkle evenly with salt and pepper. roast for 20 - 40 minutes or until shriveled and soft.
2. remove from the oven and let cool. place the tomatoes, reserving the juices, into a blender and puree until you have about 3 cups.
3. drizzle about 2 teaspoons olive oil in a large sauce pot. heat over medium high heat until shimmering. add the garlic and onions, turn down to medium and stir frequently. allow to cook until fragrant, about 30 seconds. add the tomato puree, juice, chicken stock, brown sugar, salt and pepper. stir and allow to come to a oil. boil for 10 minutes and turn down to simmer. add the cream and simmer for 10 - 15 minutes.

slow-cooked kale, pancetta, breadcrumbs + poached egg

2 cups bread cubes from fresh or day-old loaf
3 tablespoons olive oil
salt
kale ingredients:
2- 3 ounces pancetta - diced into small cubes
1 pound kale - center ribs and stems removed
salt
1 sprig rosemary
1 chile de arbol
1 cup yellow onions - sliced
2 garlic cloves - mined
2 eggs
splash of vinegar
pepper
olive oil
breadcrumbs steps:
1. place bread in a food processor and pulse until crumbs are coarse. toast crumbs in olive oil in a large skillet over medium-high heat, tossing frequently, for about 5 minutes or until crumbs are crunchy and golden brown. season with a pinch of salt an let cool on a paper towel-lined plate.
kale steps:
1. bring a large pot of water to a boil over high heat. add 1 tablespoon salt. working in batches, blanch kale for 2 minutes. drain, let cool, and squeeze out excess water with your hands. coarsely chop. set aside.
2. place the pancetta in a large saute pan over low heat and cook covered for 15 minutes. remove cover and cook for about 5 minutes more or until the fat has rendered and the pancetta is crisp. remove pancetta with a slotted spoon and place on a paper towel-lined plate. set aside.
3. add 3 tablespoons olive oil to the pan with the pancetta fat and place over medium heat. add the rosemary sprig and chile and let sizzle, shaking pan every so often, for about a minute. reduce heat to medium-low and add onion. season with 1/32 teaspoon salt. cook for 2 minutes, then add the garlic. continue cooking stirring every so often until onion is soft and starting to brown, about 5 - 7 minutes. discard rosemary and chile. add remaining 2 tablespoons oil and kale, stir to coat. season with 1/4 teaspoon salt, reduce heat to medium-low, and cook, stirring every 5 - 10 minutes, until kale turns almost black and is slightly crisp at edges, about 30 minutes total.
4. bring a small shallow saucepan to a simmer. crack each egg into a small bowl or ramekin. sprinkle a couple of teaspoons of vinegar into the pot of water. when the kale has cooked for about 25 minutes, adjust the heat of the water so that it's barely simmering. use the handle of the wooden spoon to make a whirlpool in the water, then drop one egg into the center of the whirlpool. repeat with the other egg. adjust the heat to keep the water just below a simmer. set the timer for 3 minutes. using the slotted spoon, lift one egg up from the water and shake it. the yolk should jiggle a little bit, but shouldn't look too loose. when the eggs are cooked to your liking, remove each one with a slotted spoon and transfer to a paper towel-lined plate.
5. When the kale has finished cooking, stir in 1/4 breadcrumbs and the pancetta. taste and adjust seasoning if necessary. divide the kale mixture between two bowls. top each with an egg. season with salt and pepper.

panzanella with chicken, crisp chicken skin and capers

1 6-inch length ciabatta or baguette (preferably stale) - cut into 1-inch cubes

1. cut tomatoes into bite-sized pieces and transfer to a large bowl. using a large chef's knife, mince 1 of the smashed garlic cloves. add a pinch of salt and using the flat side of the knife, smash into fine paste. add garlic paste to the tomatoes along with 1/4 teaspoon salt and 1 tablespoon olive oil. toss to coat and set aside.

2 (28-ounce) cans whole, peeled tomatoes

6 tablespoons ground parmigiano-reggiano + more as needed
6 tablespoons ground pecorino romano+ more as needed
1 very large or 2 medium ciabatta loaves, for serving

4 slices duck bacon - fat removed from all but 1 - chopped into lardons
1 medium yellow onion - peeled and finely chopped
1 14-ounce can whole peeled tomatoes with their juice

4 legs duck confit - excess fat scraped off
2 tablespoons olive oil
1/2 day-old baguette - cut into coarse crumbs
1 tablespoon fresh parsley
2 sprigs fresh thyme
steps:
1. combine the beans, leek leaf, 1 crushed clove garlic, a large pinch of salt and the bouquet garni in a large saucepan. cover with cold water, bring to a boil, and lover the heat. let simmer over low heat while you proceed.
2. in a large heavy pot, cook the duck bacon over medium-high heat for 3 minutes, or until beginning to render and brown. turn the heat to low and add the onion and the 4 sliced cloves garlic. cook for 15 minutes, keeping the heat low. add th tomatoes and their juice, crushing them with a wooden spoon, a pinch of salt, and a few healthy grinds of black pepper. simmer on low for half an hour.
3. meanwhile, put the duck legs in a large frying pan and set it over medium heat. let the duck legs brown deeply on both sides, about 5 minutes a side, and remove to a plate, reserving the fat in the pan. add the olive oil to the pan along with the 2 remaining crushed cloves garlic, keeping the heat at medium. add the bread crumbs and cook, stirring, until fragrant, abou2 minutes. remove from heat, discard the garlic, and stir in the parsley. drain the beans, reserving their cooking liquid and discarding the leek, garlic, and bouquet garni. stir the beans into the tomato mixture, nestle in the thyme and the duck legs. season with salt and pepper.
4. preheat the oven to 350 degrees. scatter the bred crumbs over the top of the cassoulet and evenly ladle over 1 1/2 cups of the bean cooking liquid. bake until the bread crumbs are nicely browned, about 1/2 hour.

bouquet garni of 3 sprigs fresh parsley, 1 sprig chervil, 2 cloves, 1 bay leaf and 6 peppercorns
4 slices duck bacon - fat removed from all but 1 - chopped into lardons
1 medium yellow onion - peeled and finely chopped
1 14-ounce can whole peeled tomatoes with their juice

4 legs duck confit - excess fat scraped off
2 tablespoons olive oil
1/2 day-old baguette - cut into coarse crumbs
1 tablespoon fresh parsley
2 sprigs fresh thyme
steps:
1. combine the beans, leek leaf, 1 crushed clove garlic, a large pinch of salt and the bouquet garni in a large saucepan. cover with cold water, bring to a boil, and lover the heat. let simmer over low heat while you proceed.
2. in a large heavy pot, cook the duck bacon over medium-high heat for 3 minutes, or until beginning to render and brown. turn the heat to low and add the onion and the 4 sliced cloves garlic. cook for 15 minutes, keeping the heat low. add th tomatoes and their juice, crushing them with a wooden spoon, a pinch of salt, and a few healthy grinds of black pepper. simmer on low for half an hour.
3. meanwhile, put the duck legs in a large frying pan and set it over medium heat. let the duck legs brown deeply on both sides, about 5 minutes a side, and remove to a plate, reserving the fat in the pan. add the olive oil to the pan along with the 2 remaining crushed cloves garlic, keeping the heat at medium. add the bread crumbs and cook, stirring, until fragrant, abou2 minutes. remove from heat, discard the garlic, and stir in the parsley. drain the beans, reserving their cooking liquid and discarding the leek, garlic, and bouquet garni. stir the beans into the tomato mixture, nestle in the thyme and the duck legs. season with salt and pepper.
4. preheat the oven to 350 degrees. scatter the bred crumbs over the top of the cassoulet and evenly ladle over 1 1/2 cups of the bean cooking liquid. bake until the bread crumbs are nicely browned, about 1/2 hour.

roast pumpkin soup

ingredients:
2 small pumpkins
1 cup chicken broth
1/2 cup heavy cream
3 fresh sage leaves
2 sprigs fresh thyme
1 clove garlic - minced
1 thick slice of day old bread - torn into small pieces
2 slices bacon
1/4 cup gruyere
nutmeg
butter
olive oil
salt
pepper
steps:
1. preheat oven to 375 degrees. cut a small circle around the diameter of the pumpkin to remove the top; set aside. with a spoon, scrape out the seeds and any loose, stringy fibers, but not any of the flesh.
2. over medium high heat in a large saute pan, cook bacon until crispy. drain on a paper-towel lined plate and remove grease from pan. tear into bite-size pieces when cool.
3. in the same pan over medium high heat, add a large tab of butter, a drizzle of olive oil, garlic, whole thyme sprigs and sage leaf. saute for about a minute until garlic is soft. add bread and bacon and season with salt and pepper. cook for about a minute or so until bread is lightly brown and crisp, adding more olive oil if the bread feels too dry.
4. whisk together the broth, cream and a pinch of nutmeg with a pinch of salt and pepper in a bowl.
5. add bread mixture to the pumpkins, pressing them firmly into the bottom. pour the liquid into each pumpkin and replace top. place pumpkins in a small, greased roasting pan and lightly brush the flesh with olive oil. bake for 1 hour until pumpkin flesh is soft but sill holds its shape. remove from oven.
6. remove thyme and sage leaves. gently spoon liquid out of the pumpkin and add to the blender, leaving the bread bits behind. gently spoon out the inside of the pumpkin flesh, being careful not to rupture the structure of the pumpkin, and add to the blender. blend until smooth.
7. meanwhile, add gruyere to the bread pieces in the pumpkins. pour soup on top, garnish with sage leaves and serve.

2 large eggplants - chopped into 1-inch cubes

1 teaspoon dried oregano
1 teaspoon dried fennel
5 - 6 large ripe tomatoes - chopped
shaved parmesan
handful of flat-leaf parsley (garnish)
olive oil
2 slices of rustic bread
salt
pepper
steps:
1. in a large colander sprinkle salt on eggplant to coat and allow to drain for 1 - 2 hours. rinse and pat dry. season with salt, pepper, oregano and fennel.
2. coat a large saute pan with olive oil and place over medium - high heat. add eggplant and saute for about minutes, stirring intermittently for an even cook. when eggplant is golden brown, add the onions and saute for another minute, until translucent.
3. add garlic, capers and vinegar and cook for 1 - 2 minutes until the vinegar evaporates. add tomatoes and turn heat down to medium-low. simmer for 20 minutes. let cool completely.
4. drizzle rustic bread slices with olive oil and place in a grill pan over medium high heat. press down with another pan or a filled tin can for weight and grill until both sides are crispy and golden brown. take off the grill, move to serving platter and season with salt.
5. once the caponata has cooled, spread over grilled bread, garnish with parmesan to taste and parsley, slice in half and serve.

ceasar salad bites

1 head of romaine lettuce, washed
6 - 8 anchovies
a thick slice of day old rustic bread
2 cloves of garlic - 1 minced, 1 whole
1 egg
1/2 lemon
3 tablespoons olive oil
parmesan
salt
pepper
steps:
1. remove the large outer leaves of the romaine, picking out the smaller pieces in the center.
2. chop up the bread into cubes, about 1-inch thick. coat a saute pan with olive oil over medium heat and add bread. cook for about a minute, until bread begins to get some color, then add minced garlic, cooking for another minute until bread pieces are a nice golden brown. season with salt and pepper and set aside.
3. slice the whole clove of garlic in half and rub the inside of a large bowl with the open ends. add the egg and squeeze half of a lemon into the egg while whisking. once combined, whisk in about a tablespoon of olive oil.
4. add lettuce leaves to bowl and mix until coated. arrange leaves on a serving platter. fit a crouton in the center of each leave, followed by an anchovy. shave parmesan over each leave, and season with salt and pepper.
