zucchini fritters

ingredients:
6 tablespoons corn oil
2 medium yellow onions - peeled and finely diced
4 medium zucchini - ends trimmed, grate on the large holes of a box grater
1 egg - lightly beaten
2 tablespoons all-purpose flour
salt
pepper
salsa
sour cream

steps:
1.  heat 2 tablespoons of the oil in a medium nonstick skillet over a medium flame.  add the onions and cook, stirring frequently, until soft, about 5 minutes.  set aside.

2.  working in batches, place a small mound of grated zucchini in the center of a large square of cheesecloth.  gather the corners of the cloth together and, holding over a sink or large bowl, squeeze out as much water as possible.

3.  transfer zucchini to a small bowl.  add the onions, egg and flour.  season with salt and pepper to taste, them mix until thoroughly combined.

4.  heat the remaining oil in the skillet over a medium flame.  using your hands, gently form the zucchini mixture into 8 patties about 1/2-inch thick.  when the oil is hot, fry the patties in batches until browned and crisp, 2 - 3 minutes per side.

5.  using a slotted spatula, transfer the fried patties to paper towels to drain. season the patties with salt while still hot.  serve with salsa and sour cream.
