french bread with grilled garlic

ingredients:
2 whole heads of garlic
1/2 cup olive oil
1 tablespoon snipped fresh basil, oregano, rosemary or thyme
1 16-ounce loaf unsliced french bread - cut into 1-inch thick slices

steps:
1.  remove the paper outer layers from the garlic heads.  tear off 2 18 x 18 pieces of heavy foil.  fold each piece in half to make a double thickness of foil.  place one head of garlic on the center of each piece of foil.  bring the foil up around he garlic on all sides forming a cup.

2.  pour 1/4 cup of olive oil over each head of garlic, letting the oil flow between the cloves and onto the bottom of the cup.  sprinkle each with half of the herbs.  twist the sides of the foil to completely enclose the garlic heads in the foil.

3.  grill the foil packets on a grill rack directly over medium to medium-high coals for 25 minutes.  add the bred slices tot he grill.  grill for 2 - 4 minutes more or till the bread is toasted, turning once,  and garlic cloves are tender.

4.  transfer garlic head to a plate.  pour any oil in the foil over the garlic.  break off a clove of garlic and squeeze the paste form the garlic clove onto the bread.  spread over bread.

roasting alternative:
1.  cut off the stem and the top part of the individual cloves of garlic.  place all of the heads in an oven-proof pan facing up.  pour olive oil over the exposed part of the garlic.

2.  bake in a 375 degree oven for 30 minutes or until garlic begins to soften.
