hoppin' john

ingredients:
1 pound cajun sausage
2 tablespoons oil
1 medium yellow onion - chopped
1 red bell pepper - chopped
1 clove garlic - minced
2 cups hot water
2 bay leaves
1 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
2 15 ounce cans black-eyed peas - drained and rinsed
3 cups cooked rice

steps:
1.  brown the sausage in the oil over medium heat.  add the onion, pepper and garlic and saute them until the onion is tender (6-8 minutes).

2.  add the water, bay leaves, salt, both cayenne and black peppers, and black-eyed peas.  bring the pot back to a low (gentle) boil over high heat.  Reduce to low heat, cover, and simmer 40-50 minutes.

3.  remove the bay leaves, stir in the rice, and continue to simmer another 10 minutes until all the liquid has been absorbed.  serve hot with cornbread or garlic toast.
