ingredients:
4 medium-size roam-type tomatoes - cored and diced
2 tablespoons minced italian parsley
2 tablespoons minced fresh basil
2 teaspoons white wine vinegar
2 tablespoons extra-virgin olive oil
salt
pepper
1 loaf crusty italian bread
basil sprigs (optional)
steps:
1. in a bowl, combine tomatoes, parsley, basil, vinegar, and 2 tablespoons of the olive oil. salt and pepper to taste. set aside.
2. cut focaccia into 16 equal pieces. place focaccia or bread in a single layer on 2 baking sheets and broil about 4 inches below heat, turning once, until golden brown on both sides; 2 - 4 minutes.
3. set toasted bread on a platter and spoon tomato mixture equally on top of each piece; garnish with basil sprigs.
