edamame bites

cook time:  5 minutes
servings:  12

ingredients:
1 cup frozen shelled edamame
1/3 cup grate parmesan
7 tablespoons olive oil
1 tablespoon lemon juice
12 baguette slices - toasted
2 tablespoons chopped basil
salt
pepper

steps:
1.  boil edamame in salted water 5 minutes, drain.  in a food processor, puree edamame, parmesan, 4 tablespoons olive oil and lemon juice.  season to taste.

2.  top toasts with spread, remaining olive oil and basil.
