bistro chicken cutlets

ingredients:
1 pound chicken cutlets
5 tablespoons butter
1/2 cup sliced shallots
1/2 cup chicken stock
1/4 cup chopped cornichons
1 tablespoon fresh thyme
1 tablespoon whole grain mustard

steps:
1.  in a large skillet, cook cutlets in 2 tablespoons butter over medium, 4 minutes per side.  transfer to platter.

in skillet, boil next 5 ingredients until thickened, 5 minutes.  whisk in remaining butter; pour over chicken.
