3 1/2 - 4 pounds rutabagas - peeled and cut into 1-inch thick pieces
2 tablespoons unsalted butter
4 garlic cloves - peeled and roughly chopped
1 1/2 teaspoons salt
1 cup whole milk
4 ounces cream cheese - cut into small chunks
2 tablespoons smoked olive oil
2 teaspoons smoked paprika
1. heat butter in a large, heavy 4-quart pot, set over medium heat. once butter has melted, stir in the rutabaga and garlic. stir to coat the vegetables, then sprinkle with salt. pour in the milk and bring to a simmer, then turn heat to low and cover. simmer for 30 minutes. turn off heat, remove lid and let cool for about 5 minutes.
2. using a hand mixer or a stand mixer with the paddle, begin to mash the rutabaga. add the cream cheese and mash to desired consistency. add the olive oil and smoke paprika and mix thoroughly. season with salt and pepper to taste.
