4 large potatoes
8 - 10 cups vegetable oil

1.  peel potatoes and slice to desired thickness.  soak potatoes for up to an hour, changing the water about 3 times throughout the process when the water gets cloudy.

2.  steam potatoes for 8 minutes in a steamer.  dry well.

3.  fry potatoes in small batches at 160 degrees for about 4 minutes.  remove from oil, drain and let cool. 

4.  turn oil up to 190 degrees and fry potatoes again until crispy.  salt well.
