4 medium beets - peeled and cut into 1/2-inch pieces
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon pepper
4 scallions - chopped
2 teaspoon lemon juice
1. toss beets with olive oil, salt and pepper and place on a baking sheet. roast at 450 degrees, stirring once or twice, until tender, about 35 minutes.
2. transfer to a bowl, toss with scallions and lemon juice. top with crumbled feta.
