easy lemon squares

cook time:  35 - 40 minutes

crust ingredients:
1/4 cup sugar
3 tablespoons butter - softened
1 cup flour

topping ingredients:
3 large eggs
3/4 cup sugar
2 teaspoons grated lemon rind
1/3 cup fresh lemon juice
3 tablespoons flour
1/2 teaspoon baking powder
1/8 teaspoon salt
2 teaspoon powdered sugar

crust steps:
1.  preheat oven to 350 degrees.  beat sugar and butter together in a mixing bowl at medium speed until creamy.  gradually add flour to sugar mixture, beating on low, until the mixture resembles fine crumbs. 

2.  gently press mixture into bottom of an 8-inch square baking pan.  bake for 15 minutes.  cool in pan on a wire rack.

topping steps:
1.  beat eggs in a mixing bowl at medium speed until foamy.  add sugar, lemon rind, lemon juice, flour, baking powder and salt and beat until well-blended. 

2.  pour mixture over partially baked crust.  bake for 20 - 25 minutes or until set.  cool in pan on a wire rack.

3.  sift powdered sugar evenly over the top.
