snickerdoodle bread

cook time:  35 - 40 minutes
servings:  4 mini loaves

ingredients:
1 cup butter - softened
2 cups + 2 tablespoons sugar
1/2 teaspoon salt
4 teaspoons cinnamon - separated
3 eggs 2 teaspoon vanilla
3/4 cup sour cream
2 1/2 cups flour
1 1/2 teaspoons baking powder

steps:
1.  preheat oven to 350 degrees.  cream butter, 2 cups sugar, salt and 2 teaspoons cinnamon until fluffy.  add eggs, one at a time, making sure to incorporate completely before adding the next egg.  add vanilla and sour cream, mix well.

2.  in a small bowl, sift flour and baking powder.  add flour mixture to the butter mixture.  mix until combined.  spoon batter into 4 greased mini loaf pans.  fill only 2/3 full.

3.  mix 2 tablespoons sugar and 2 teaspoons cinnamon in a small bowl.  generously sprinkle over the tops of all 4 loaves. 

4.  bake 35 - 40 minutes, until a toothpick comes out clean.  let sit 5 minutes, then remove from baking pans and cool.
