cauliflower soup

1 head of cauliflower
2 carrots
1 large yellow onion
3 tablespoons unsalted butter
6 cups chicken stock
4 tablespoons flour
3 cups milk
1/4 cup sour cream
2 bay leaves
2 teaspoons parsley
1/4 teaspoon pepper

1.  finely chop the onion and carrots, set aside.  half the head of cauliflower and remove the florets, then cut them into smaller pieces.  place all of the cauliflower into a separate bowl. 

2.  melt 2 tablespoons butter in a large soup pot.  add the chopped onions and carrots and allow to cook for 5 minutes.  add the cauliflower, chicken stock, bay leaves, parsley and pepper.  stir to combine.  cover and bring to a boil over medium heat then reduce to simmer for 25 - 30 minutes.

3.  meanwhile, whisk the flour and milk together in a bowl.  in a medium saucepan melt 1 tablespoon butter, then add the flour mixture.  bring to a boil over medium heat, whisking constantly.  once it boils, remove from the heat and continue to whisk for  few more minutes as it sets.  add the flour mixture to the soup and combine.  simmer for 5 more minutes.  remove from heat and add sour cream and salt to taste.
