crispy fried goat cheese

16-ounce goat cheese log
1 cup panko bread crumbs
2 teaspoons dried parsley
1 teaspoon dried thyme
1/2 teaspoon granulated garlic
1/2 teaspoon ground white pepper
2 eggs - beaten
1/2 cup flour
olive oil

1.  place the goat cheese log in the freezer for about 15 minutes.  combine bread crumbs, parsley, thyme, garlic, pepper and salt in a bowl.  place eggs in a bowl.  place flour in a shallow bowl.  line a sheet pan with parchment paper.

2.  remove cheese from freezer and slice into 1/4 - 1/2-inch pieces using a sharp knife.  gently coat the cheese in flour, then place it in the egg mixture, then coat it in the bread crumbs mixture.  place it on the lined pan.  repeat until all pieces are coated.

3.  add enough olive oil to coat the bottom of a nonstick pan and place over high heat.  when oil is hot place the cheese pieces gently in the oil.  when bread crumbs are brown on the bottom, flip the piece over to brown the other side.  once browned, remove from pan and transfer to a paper towel lined plate.
