gingerbread pancakes

ingredients:
1 1/2 cup flour
1/2 cup brown sugar
1/2 teaspoon baking powder
1 tablespoon baking soda
1/2 teaspoon salt
1 teaspoon ginger
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon ground cloves
1/2 cup coffee - cooled
1/2 cup milk
2 eggs
1/4 cup melted butter - cooled

steps:
1.  mix flour, brown sugar, baking powder, baking soda, salt, ginger, cinnamon, nutmeg and cloves together.  slowly mix in milk, coffee, butter and eggs.  let mixture stand 10 minutes to thicken.

2.  cook on a griddle or pan, about 1 - 2 minutes on each side.
