best mac n cheese...ever

16 ounces cook pasta (shells or orecchiette)
4 strips of bacon
1 bunch broccoli rapini
1 shallot -chopped
2 cups of milk or cream
2 tablespoons flour
1 cup grated parmesan cheese
1 bay leaf
fresh oregano - chopped
bread crumbs

1.  preheat oven to 350 degrees.  cook bacon until crispy.  remove from pan and drain on a paper towel.  chop and set aside. 

2.  saute shallots and rapini in bacon drippings.  remove from pan.

3.  in a separate pan, bring milk, flour, cheese and bay leaf to a boil.  quickly remove from heat and let simmer about 10 minutes.  salt and pepper to taste.

4.  add bacon, rapini mix and oregano.  mix sauce with noodles and place everything in a 9 x 9 greased baking dish.  top with bread crumbs and bake for 20 minutes.
