potato-egg salad

ingredients:
1 pound new potatoes - halved
4 eggs
1 cup frozen peas
3 tablespoons olive oil
2 teaspoons lemon juice
parsley
mint
parmesan cheese
salt
pepper

steps:
1.  boil potatoes 10 minutes.  add eggs to the water, remove from heat, cover and let sit for 10 minutes.

2.  add 1 cup frozen peas, cover 1 minute.

3.  drain, peel and quarter the eggs.  add back into the potato mixture.  toss with olive oil, lemon juice parsley and mint.  sprinkle with parmensan and salt and pepper to taste.
